Gingerbread Dessert Smoothie

This gingerbread smoothie is super healthy, gluten-free, and yes, tastes like gingerbread!

The Christmas tree is up and decorated and I'm feeling very accomplished! It doesn't take much these days but I did check a lot off my to-do list this week. 

With Vienna in half-time daycare, I only have a limited amount of time to get my work-related stuff done (which some weeks mean I work at night), but starting this week, we have a babysitter for V three afternoons per week just for December.

That's why you're reading a second blog post from me this week (woohoo!) and why you're about to get the recipe for this amazing Gingerbread Dessert Smoothie! If you didn't see my Sweet Potato Brown Rice Pudding I posted yesterday - OMG, you must check it out!

Vienna and I made this wonderful dessert smoothie together. She was finger painting with the molasses on the kitchen counter as you can see from this photo. 

Being in the kitchen with Vienna is pure JOY for my heart.

She was home from school when we created this recipe because she had the stomach flu Tuesday night. It came in as fast as it left and she's happy as a peach today. What a curious little monkey!

In this photo, she really wanted to pour the smoothie and kept saying "mama, I DO THIS". That's her favourite thing to say lately. Whether it's putting on her coat or shoes, or peeling an orange...she says: "mama, I DO THIS", hehehe!

As I'm sure you can guess, Vienna LOVED this dessert smoothie. I mean really, how could you not? If you like the taste of gingerbread, you'll love this smoothie.

This recipe includes whole food nourishing ingredients you may already have in your kitchen like molasses, ginger, bananas, cinnamon and coconut milk.

I know you're probably wondering where I got those mugs from because that was the most popular question on my instagram when I posted about it. They are as old as me, which for the record is #almost40 :) They are vintage! I'm guessing my mom probably got them at Kmart or something. Sorry friends, I know that store doesn't exist and The Muppets is no longer on television. 

Regardless, here's my Gingerbread Dessert Smoothie!

Ingredients
  • 1 can (400mL) of organic full fat coconut milk or nut milk*
  • 2 ripe bananas
  • 2 tbsp blackstrap molasses
  • 1 tsp ground cinnamon
  • 1/2 tsp pure vanilla extract
  • 2 thumb size fresh pieces of ginger
  • 1 scoop of protein powder
  • coconut flakes (optional)
Instructions
  1. Place all ingredients into your blender and give a whirl!
  2. Top with coconut flakes if you like!

Notes

Serves 2. If you want to make this a breakfast smoothie or power it up, simply add 1 scoop of your favourite protein powder.

If it's not creamy enough, add half an avocado.

*If you use nut milk from a carton or tetra-pak just keep in mind it probably won't be as creamy as using full fat canned coconut milk.

I really like serving this in shot glasses.

It is creamy, rich and naturally sweet and yep, it tastes like gingerbread!

I have the Fozzie Bear version of you mug from my childhood, and I’m in Australia! They must have been popular everywhere (the show was one of my favourites). I’m definitely going to give this recipe a try. It sounds like it would be nice even in our very hot Christmas climate!

Just made it this AM (modified for 1 person) and it’s delicious!!! .. I added genuine health vegan protein (only have vanilla but worked!) and collagen because I can’t help my self ;)
