It's become hugely popular to purchase store-bought nut and seed milks as evidenced by the number of brands that line grocery store shelves these days. This is great because many people are realizing the benefits of going dairy-free. However, many of the brands at the grocery store also come with a dose of sodium, sugar and other unnecessary additives which you can completely avoid if you make your own! Not only do you eliminate the additives but you'll find homemade tastes SO MUCH BETTER!
You will be amazed at how easy it is to make your own almond milk.
This recipe is a favourite from my book JOYOUS HEALTH, but I've created a fun video for you here. The recipe is shared near the end of the video, you can easily pause the video and write down the ingredients.
Now you've got a smashingly delicious almond milk, need some delicious ways to enjoy it!?
Drink 1/2 cup straight up!
Use as the base of a smoothie
Use instead of cream for soup -- stayed tuned as my next recipe video is for a Chilled Cauliflower & Almond Soup
Pour on top of your favourite healthy granola
Enjoy as a latte with matcha -- yummy!
Be sure to keep it in an air-tight container refrigerated. It's fresh for 4-5 days.

This is an amazing recipe. It's simple and delicious. I made it for the first time last week and couldn't believe how good it was. I had a lot of fun making this and it was really neat to see how a few simple ingredients can create something that tastes great and is also nutritious. Thanks for sharing the recipe!

What could you do with the strained out almond grounds?
ReplyHi Julie, You can add the leftover almonds to oatmeal, smoothies, and muffins as-is. You can also spread it out on a baking sheet and bake it in a low oven until it is completely dry (about 2-3 hours) and keep it frozen for future use in baked goods. Kate - Joyous Health Team

Reply5-7 days in the fridge. You could also freeze it if you think you won't use it all within a week.
I have been buying raw (cream coloured) unsalted almonds. I thought they were the most healthy for me. I see in your recipes you list unsalted raw almonds but they look like the almonds that have the skin on them. Can you please tell me the brand you buy. I know Costco sells a large bag of almonds unsalted with skins on. Probably not organic however. Curious.... thanks in advance Sharon
ReplyHi Sharon! Sounds like you have been buying skinned/blanched almonds? The best almonds are organic and raw and can be found in most bulk sections of health food stores. Brands like Prana or Organic Traditions are good ones to look for if you prefer to buy them in bags. Heather- Joyous Health Team
Hi! Can you oversoak your almonds? A lot of times I start soaking them and then I forget about them. Should I throw the almonds away if I accidentally soak them for 2 days?

Love this recipe! Homemade almond milk tastes so much better than store-bought. Just wondering what brand/where you purchased your mesh sieve? I have been looking for one with handles like the one in your video but can't seem to find one with fine mesh (just hard metal). I am not a fan of cheesecloth. Thanks so much!
ReplyI think I got that one from my local health food store. You can also find nut bags on amazon. Hope that helps!
I just soaked my almonds overnight. A few are floating on top of the water and the rest are not. Are the ones floating okay to eat? Why are some floating and others are not. Thank you!
ReplyYes that's totally fine, they probably just have a slightly different fat composition and didn't absorb as much water. Enjoy!
Do you have to soak the almonds overnight? I have been making almond milk for quite a while now, but have never soaked them.
ReplyYou don't have to but you will get a better result if you soak them!
