I'm joyous to be be sharing this recipe with you today because it's a classic re-invented. Key lime pies and tarts are usually full of refined sugar. This one is healthy, because it's packed with fibre, healthy fats and wow, it tastes amazing!
This is a fun recipe if you've got little ones around that want to give a helping hand. It's totally raw - no baking required so you can enjoy it soon after making it.
In the photo below is all the ingredients in my wonderful tarts (except the vanilla is missing). As per my usual joyous recipe-creation-style. I've made these from simple ingredients that I hope you have in your kitchen right now.
If the idea of using avocados in a dessert is a new concept to you, don't fear it! EMBRACE IT! Your taste buds and digestive system will thank you. Avocados while high in monounsaturated fat, they are very satiating so a little goes a long way. They are also a great source of fiber so you will feel totally satisfied when you have this as a dessert as opposed to your run-of-the-mill key lime tart from the grocery store.
Limes and avocados make all my foodie dreams come true. The taste together is absolute perfection! Whether it's in guac or pudding -- it's a match match in joyous heaven.

Serves 4 generously.
Be sure to buy "medjool" dates for this recipe. Honey dates are too dry and will not work for the crust.
*You could also use an 8" diameter tart pan with the same measurements.
Someone commented on my IG when I originally posted this that it looks like it tastes like spring and that's a perfect description! I made it for some friends we had over for dinner on the weekend and they loved it. You'll find this dessert is great for entertaining or perfect for weekdays when you want a sweet healthy treat without the refined sugar.

What would the amounts be to make this in a regular pie pan?
ReplyI would do the same amounts. If it was a 8' diametr tart or pie pan the ingredients would easily fill it.
This might be a long shot but any suggestions for a nut-free substitution for the pecans? Sunflower or pumpkin seeds?
ReplyYou could definitely use seeds like pumpkin or sunflower. I haven't tried it with hemp hearts, but that's another option. Hope that helps!
Hi Joy, Two nights ago I made a raw key lime pie using the crust recipe from your "Apple Tart with Maple Cream" and the "Key Lime Pudding" recipe from your book for my pie filling, and it was so delicious!!! The only change I would make another time would be to double the pudding recipe (I had made 1 1/2 times the recipe), as I had about an 1" of crust above the top of the filling. I also wanted to say how much I enjoy reading your newsletter, blog posts and following you on Instagram. Thank you for all the great, inspiring information you share. I use 3 avocados in this recipe and it made 4 small tarts perfectly. My book only uses 2 avocados. I'm so happy to hear you are enjoying my newsletter and social media posts. Have a joyous day!
Joy, The avocado lime recipe is truly inspired and looks delish. Just wanted to remind those with babies younger than 1 year to not feed them honey until they are older . Babies lack the digestive enzymes necessary to destroy harmful bacteria that may be present in the honey. Love your recipes! Toby
ReplyThanks Toby, and yes I'm fully aware. This is not a dessert I'm recommending for babies. When I said I'm excited to share it with Vienna, I didn't mean literally as in "we are eating it now". I meant when she's older but I can totally see how that can be read that way so thanks for pointing it out. She's only on boob milk and a few single ingredient foods at this point. I'm going to update the post so other mamas don't get the wrong impression!
Any ideas for a honey substitute? I would love to try these but have gestational diabetes and the dates and honey pack quite the carbohydrate punch.

ReplyIt's a combo of 2 different recipes from my first book Joyous Health from 2014 (avocado pudding and apple pie tart crust). Soooo, I created those recipes in 2011/2012 as that's when all of my recipes would have been submitted to my publisher. But if you're asking where I get daily inspiration, I would say firstly it's travel, then my foodie friends, my mom, farmers markets and independent gourmet grocery stores, magazines, photos of other people's food on twitter/instagram/video etc.

Can substitute anything for the coconut?
ReplyFor sure, you could use pumpkin or sunflower seeds or hemp hearts. Enjoy!
Does it takes like avocado with using that many of them?
ReplyI don't think so, it tastes like key lime pie to me. You can also adjust it to your liking and use more lime juice or honey.

This was fantastic! I love avocados and it sounded weird at first but makes perfect sense. I had two smaller rectangle glass dishes about 4x7" so I divided the crust
