I added radicchio because not only is it a beautiful colour, but it is a super healthy leafy vegetable very popular in Italian cuisine and in case you didn’t know I was Italian in past life ;)
Radicchio is one of my faves to add to salads because it has great bitter qualities which support detoxification and gut health. Don’t worry about this salad tasting bitter though, the dressing and other ingredients balance out the flavours to perfection.
Let's talk about this salad dressing though! It is creamy and fulfilling since it's made from hummus. It's gonna take your salads to a whole new epic level of deliciousness. If you're new to using hummus as a salad dressing ingredient, you're in for a real treat.

This salad has simple, but good quality ingredients so you can certainly add cucumber, celery or beets. If you're making it for a large crowd, just triple the ingredients.
