This Healthy Apple Hemp Loaf is perfect for cozy mornings slathered with your fave nut or seed butter - but that coconut butter glaze - ohhhhh yeah! Do yourself a favour and do not skip that step. It’s the perfect finishing touch to this moist, delectable loaf.
Let's talk about these nourishing ingredients. I love using oat flour in baking because it’s such a versatile flour to cook with, especially if you typically use white or whole wheat flour. It’s a great transition flour to the world of gluten-free baking. That being said, if you have a sensitivity to gluten, it’s important to note that some people are still sensitive to other grains including oats.
More reasons to love oat flour:
- Energizing. Oat flour's complex carbs are here to fuel your day with long-lasting energy, ensuring you're ready to conquer anything that comes your way.
- Bone Booster. Let's talk about strong bones! Oat flour contains magnesium and phosphorus, giving your bones the love they need to stay strong.
- Gut loving. Oat flour's high fiber content is on a mission to make you feel satisfied.
- Heart-healthy choice. Packed with beta-glucans, which help to balance our cholesterol by lowering LDL cholesterol.
Another incredible addition to this loaf is ground hemp. Not to be confused with hemp hearts, this is more like a flour. Hemp is ground down into a flour texture. If you don’t have ground hemp, you could try adding a little more oat flour or if you're really motivated and you have hemp hearts, you could put them in your food processor and make your own ground hemp.
As I mentioned above, you definitely do not want to skip the coconut butter glaze. When melting coconut butter down you have to be really careful not to burn it which means patience is a virtue! Coconut butter is very different from coconut oil as it contains the meat and the fibre of the coconut, not just the fat like coconut oil. Adding some coconut oil helps the texture of the glaze. It’s naturally sweet so you do not need to add any sweetener.
- Truly healthy, satisfying and comforting especially if you enjoy it with a Rise and Shine Tea Latte (hint, hint).
- Gluten-free and nut-free (if you want to add chopped walnuts or pecans that would add a lovely texture)
- Satisfying and blood sugar balancing especially if you enjoy it with some almond butter
- Kid-and-picky-eater-friendly, it’s also lunchbox friendly since there’s no nuts
- Packed with vitamins, minerals and anti-inflammatory compounds

How much maple syrup did you add? It's in the directions, but not in the ingredients list.
ReplyHi Rose! Just refresh your page. It was added yesterday afternoon but your comment looks like it came in last night so I'm not sure why you can't see it. Try a refresh, but it's 1/4 cup maple syrup. Enjoy!
Good morning! This recipe looks amazing! I love baking with oat flour and I would love to make your loaf however we use large eggs and your recipe calls for small ones. Would it make a big difference in the recipe if I used large eggs, or would one large egg be fine? Just curious. Thanks for sharing this recipe. Have a wonderful day ☺️
ReplyIt will certainly add more liquid so you might just need to add the baking time, but otherwise I think it should be fine. Enjoy!!
I'm wanting to make this but only have hemp hearts. Could I grind those and use it instead of ground hemp seeds? Or would ground flax seed be better?
ReplyYep! You probably missed it in my post but here it is :) "If you don’t have ground hemp, you could try adding a little more oat flour or if you're really motivated and you have hemp hearts, you could put them in your food processor and make your own ground hemp".
Ground flax is a great option too, but I haven't tried that myself.
Hi Joy !! Can you substitute the eggs at all ??
ReplyI'm not sure as I haven't tried it. Maybe someone will comment here if they try it egg-free.
Im sorry. I did miss that and went back and read it after I commented. I used a coffee grinder and did the hemp hearts. I'll let you know how it turned out. It's cooling right now.
ReplyThat's perfect! Hope it was delish!
The loaf tastes delicious! I used whole hemp hearts, and 2T maple syrup. Baking it with another recipe at 325F CONV bake, it only took 30 minutes, so watch carefully! Thanks for the great recipe - will try grinding the hemp seeds next time.
ReplyOh wow! That's super fast! Thanks for sharing. Just goes to show you every oven is different. I felt like mine took forever :)
Mine turned out a bit crumbly (falling apart). I think I would reduce the bake time next time. I always love your recipes! Thanks!
ReplyYes try that and let me know how it turns out. Someone else mentioned it cooked in half the time for them too.
Hi Joy. This sounds delicious. Coconut butter, never heard of this. Is this in the health food section on grocery stores? Which brand do you prefer? Also, ground Hemp, are we blending the whole seeds or you purchase them that way? Thanks!
ReplySometimes it's called "coconut manna". Nutiva, Organic Traditions and Artisana are some brands to look out for. You can use hemp hearts instead of ground hemp if you like, you'll get a similar result!
Thanks so much Joy!!
Can you make it as muffins?
ReplyAbsolutely!
Hi Joy! I’m one of those that cannot have oats. I have celiac and grains in general are bothersome. Is there any other flour I could use instead of oat flour? This looks so delicious!! Thanks!
ReplyI would suggest spelt or kamut flour, they are a great sub instead of oat flour but contain gluten. Enjoy!
Since I have celiac disease I can't have gluten so I guess this just may not be my recipe sadly! Oh well! I enjoy lots of your other ones :)
Have you checked if you can find gluten-free oat flour? I know there are gluten-free oats, unless you avoid those too? I know some people with celiac just avoid all oats, even the gluten-free ones.
I just made this loaf and absolutely love it! It’s in my lunch every day at work this week. I did make two flax eggs and it turned out fine! Baked it for 60 min. Love all your recipes Joy!
ReplyThanks for sharing that you made it egg-free and it worked out great!
Awesome loaf! Tastes really good. It also took less baking time for me, about 40 minutes. Thanks for the recipe!
ReplyGlad you enjoyed it!! thanks for sharing :)
Could input the coconut flour and use more oat flour?
Replyyou can try that! Coconut flour absorbs a lot of moisture, so you'll likely have to double at least the amount of oat flour till you get the batter to the correct texture. Enjoy!
Sorry meant to say omit* Thank you!
