No-Bake Chocolate Hemp Nut Butter Bars

These no-bake bars are rich, nutty, and packed with wholesome ingredients—your new fave healthy treat!
Mar 3, 2025 | Joy McCarthy

If you’ve been following me for a while, you know I’m all about easy, wholesome treats that taste amazing. And these No-Bake Chocolate Hemp Nut Butter Bars check all the boxes! They’re rich, nutty, perfectly chocolatey, and made with nourishing ingredients like hemp hearts, almond flour, and nut butter. The best part? No oven is required!

This recipe has recently become one of my go-to’s because it’s ridiculously simple yet so satisfying. Whether I need a quick snack between meals, a little post-workout fuel, or a healthier after-dinner treat, these bars always hit the spot. Plus, Vienna and Walker love them too, so they never last long in our house!

Why You’ll Love These Bars

Hemp Nut Butter Bars

I’ve been making these on repeat because they’re:

  • Loaded with nutrition – Hemp hearts boost protein, omega-3s, and minerals, making these bars super nourishing.
  • Naturally sweetened – A touch of maple syrup is all you need for the perfect sweetness.
  • Almond flour & coconut flour – Nutrient-rich alternative to refined flour, adding healthy fats and fibre to keep you feeling full and support digestive wellness.
  • Nut butter – The perfect creamy base, packed with protein and healthy fats to keep energy levels stable.
  • No baking is required! – Just mix, press, top with melted chocolate, and freeze. It doesn’t get easier than that!

I love keeping a stash of these in the freezer for a quick snack, a post-workout bite, or a healthy dessert when I’m craving something sweet. Vienna and Walker love them too, so they never last long in our house!

A Snack for Every Occasion

One of the reasons I love this recipe so much is that it’s so versatile! These bars are perfect for:

  • A quick and nutritious snack when you're on the go.
  • A post-workout bite to refuel with protein and healthy fats.
  • A healthy dessert when you’re craving something sweet but still want to nourish your body.
  • An afterschool treat for your kids when they are ravenous (when are they NOT hungry at school pick-up, ha!)

Ingredients
  • ½ cup Manitoba Harvest Hemp Hearts
  • ½ cup coconut flour
  • 1 cup almond flour
  • 1 cup nut butter (almond, cashew or peanut)
  • 2 tbsp coconut oil (for the base)
  • 3 tbsp maple syrup
  • 1 tbsp coconut oil (for the topping)
  • ¾ - 1 cup chocolate chips
Instructions
  1. In a large bowl, mix the hemp hearts, coconut flour, and almond flour.
  2. In a small pot over low heat, melt 2 tbsp coconut oil, then whisk in the nut butter and maple syrup until smooth.
  3. Pour the wet ingredients into the dry and mix until a crumbly dough forms. Press firmly into an 8”x8” parchment-lined pan to create the base.
  4. In a small pot or double boiler, melt 1 tbsp coconut oil with the chocolate chips on very low heat. Stir until silky smooth.
  5. Pour the chocolate over the base and spread evenly. Freeze for about 1 hour or until firm.
  6. Let sit at room temp for 10 minutes before slicing into squares. Store in freezer or fridge. Keeps for up to 3 months in the freezer.

I've been keeping a batch in the freezer so I can grab one whenever I need a little pick-me-up. And honestly, they’re so good that I usually end up sneaking a bite before they’ve even fully set! 😆

Thank you to my good friend Samantha Gladish for the inspiration for this recipe.
