Banana Oat Muffins

Ingredients
  • 1 cup old fashioned oats
  • 1 cup oat flour
  • 1 cup brown rice flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tbsp ground cinnamon
  • 1/4 cup coconut sugar or monkfruit sugar
  • 3 large bananas, mashed
  • 1/4 cup maple syrup
  • 1/4 cup melted coconut oil
  • 2 large eggs, whisked
Topping
  • 1 tbsp coconut sugar or monkfruit sweetener
  • 1/4 cup old fashioned oats
  • 1 tsp ground cinnamon
Instructions
  1. Preheat oven to 350F (180C) and line a muffin tin with paper or silicone muffin cups.
  2. In a large bowl combine oats, oat flour, brown rice flour, baking soda, baking powder, ground cinnamon and coconut sugar or monkfruit if using.
  3. In a small bowl, combine mashed banana, maple syrup, coconut oil and eggs. Make sure the coconut oil has cooled slightly otherwise it will cook the eggs.
  4. Add the wet ingredients to the dry ingredients and mix just until combined. Do not overmix.
  5. Pour batter evenly between 12 muffin cups. Combine topping ingredients into a small bowl. Sprinkle over top of 12 muffins.
  6. Bake for 25 to 30 minutes until golden brown and a fork inserted comes out clean.
Notes

Makes 12 large muffins.
