Nourish & Bloom Bowl

A vibrant spring salad bursting with seasonal goodness—spinach, radicchio, crisp apple, crunchy carrots and radishes, creamy avocado, hearty beans, and walnuts. A fresh, plant-based meal to help you feel your best this season.

No matter where you live, we intuitively start to detox around this time of year by taking the opportunity to spring clean our homes and declutter! On the weekend I cleaned out the fridge, wiped down all the windows and cleaned out the car. It felt soooo good!

Our bodies need a spring cleaning too after being bunked up inside for most of the winter where we experience lower activity levels, less exposure to light, a higher consumption of carbohydrate-heavy foods and greater toxic accumulation as a result.

This is why you need this Nourish and Bloom Bowl in your life! It will give your body a good dose of foods that help your body naturally detoxify like carrots, radish, raddichio and more.

Here are just a few of the many benefits (which I also share in my book Joyous Detox) you can reap by incorporating detoxifying foods and habits into your life:

  • increased energy and vitality
  • vibrant glowing skin (the skin is a mirror of the inside health of your body)
  • improved digestion
  • reduced cravings
  • a feeling of empowerment

This salad is ...

  • Delicious and deeply nourishing with loads of vitamin C, B-complex vitamins like folate, minerals such as magnesium and potassium
  • Rich in gut-loving insoluble and soluble fibre which fuel for your gut microbes
  • Loaded with antioxidants which help neutralize free radicals that can harm your DNA and make you age faster
  • Gluten-free and dairy-free

The dressing is a simple apple cider vinegar honey dressing that I make all the time. I love using apple cider vinegar because not only is it detox-friendly but because it's fermented and it helps to nourish our microbiome too.

Salad
  • 2-3 cups fresh leafy greens, your choice
  • 1 radicchio, chopped
  • 1 granny smith apple, chopped
  • 3 carrots, chopped
  • 3-4 radishes, thinly sliced
  • 1/2 cup walnuts, chopped
  • 3/4 cup navy beans or garbanzo beans, cooked
  • 1 avocado, cubed
  • 2 green onions, chopped
  • 1/2 tsp sea salt
Dressing
  • 1/2 cup extra-virgin olive oil
  • 2 tsp apple cider vinegar
  • 1 tbsp liquid honey, unpasteurized
  • 1 garlic clove, minced
Instructions
  1. In a large bowl, combine all the salad ingredients and toss together excluding avocado.
  2. Whisk together dressing ingredients in a small bowl. Give it a taste test. If you like it sweeter, add a touch more honey. If you like more vinegar, add a touch more ACV.
  3. Toss dressing with salad and top with avocado.

Serve 2 as a main or 4 as a side dish.

I need to try this. I am currently doing an elimination diet, as I'm quite sensitive to dairy, eggs and flaxseeds, along with other ingredients but those are the 3 worst ones. I'm on week 2 and I am feeling so much better! I'm also working on doing some spring cleaning around the house, and I have started my herb and veggie garden outside. Love this time of year, and I can't wait to dive into my garden, I think my radishes are already ready to eat
